How to change ProfessionUI back to Classic Look

Hello all!

I feel like I'm one of the only octowow players that want this, but I really like the classic profession crafting UI, and I would like that look back.

I know Octowow has changed the Profession UI because it's listed as one of the advancements they're excited to showcase, so I know it can be changed back by either editing a file or removing the file entirely. I'm just not sure which one it needs to be.

Technical Details:
- I'm using the Octowow Launcher
- I have no self-added addons that change my UI
- I have attempted a removal of the interface.MPQ file in the Data folder, as this is what I assumed to be causing the change in the ProfessionUI. However, the game will not load with this file removed so it has been readded
- I have read through the config.wtf file in the WTF folder for settings to change and saw none that appeared to be for the UI
- I have looked through the SavedVariables.lua in WTF-Account-<account name> for a way to change the design
- I have looked through the SavedVariables folder in WTF-Account-<account name>-N'Zoth-<character name>-SavedVariables for a file I can edit

Please let me know where I can find the setting to change, or what addon or mod I need to remove to have the professionUI reverted back to the clunky, much-less-fancy, UI. Thank you so much for any help you can give me!
